Cupuaçu Homemade Chocolate Recipe

Recently it is known that cocoa is not the only food from which chocolate can be produced, it is also possible to obtain cupuaçu chocolate, a fruit of the same family as cocoa. This special chocolate is called cupulate, and most people don't find any difference when compared to regular chocolate, but it is richer in protein and cheaper.  1 unit of mature large cupuaçu

 500 grams of brown sugar

 ½ cup of chocolate liquor

 filtered water

How to make Homemade Cupuaçu Chocolate (Cupulate):

The first step to make cupuaçu chocolate at home is to open the cupuaçu, separate the grains (seeds) and remove as much of the white pulp around the seeds, without cutting the seed itself. This will be a time-consuming task.

Tip: Reserve the pulp to prepare juice, cupuaçu jam, ice cream, etc. Remember that you should use mature cupuaçu for the final result not to become bitter!

Then peel the cupuaçu seeds, without leaving any trace of the husk (otherwise your cupulate will become bitter). To do this, cut off one end and open the shell with a knife, without breaking the seeds.

Once the process of removing the cupuaçu husk is finished, wash the seeds and place them in a pan with a little water. Simmer for 20 minutes, then turn off and let it cool a little.

Transfer the boiled seeds to a blender, add a little water (enough to help blend) and blend very well to make it as smooth as possible. Transfer back to pan over medium heat and add liqueur.

While cooking the homemade cupulate, add the sugar little by little and keep stirring until you get the brigadeiro point that comes off the bottom of the pan, as in the photo. Turn off heat, allow dough to cool, and store in sterilized glass jars.

Your homemade cupuaçu chocolate (cupulate) is ready! You can eat it with bread, as if it were Nutella, use it in the filling of tapioca and cakes, and dilute it in hot water to turn into a hot chocolate. You will find that all the work of getting this chocolate will be worth it in the end!
